Unlike cold brew, this method uses hot water to brew the coffee directly over ice, locking in the aromatic nuances that often get muted in traditional cold brew. What You’ll Need:

  • Freshly ground coffee (medium grind) using Vevok Chef’s O20 coffee grinder

  • Hot water (just off the boil, around 200°F/93°C).

  • Ice cubes

  • Delta Pour Over dripper and server

  • Paper filter

  • Kitchen scale (optional but recommended)

The Golden Ratio

To achieve a perfectly balanced cup, stick to this ratio:

  • 1 part coffee

  • 6 parts water

  • 4 parts ice

For example, if you’re using 20 grams of coffee, you’ll need 120 grams of hot water and 80 grams of ice.

Step-by-Step Instructions:

  1. Prep Your Equipment: Place a paper filter in your Delta Pour Over dripper and rinse it with hot water. This eliminates any papery taste and preheats your equipment. Discard the rinse water.

  2. Add Ice: Measure your ice and place it in the Delta server under your dripper.

  3. Measure and Grind Coffee: Weigh out your coffee and grind it to a medium consistency, similar to sea salt, using the Vevok Chef’s O20 coffee grinder.

  4. Start Brewing: Pour your ground coffee into the filter. Begin by pouring a small amount of hot water (about 40-50 grams) from the Loch pour over kettle to saturate the grounds evenly. Let it bloom for 30-45 seconds to release trapped gases and enhance flavor.

  5. Continue Pouring: Gradually pour the remaining hot water in a circular motion, aiming for an even extraction. The hot coffee will brew directly over the ice, melting it and rapidly chilling the brew.

  6. Stir and Serve: Once brewing is complete, gently stir the coffee to combine the melted ice. Add extra ice if desired and enjoy immediately.
